I've Got What It Takes

To Make Courgette Cakes

Because if I didn't, I wouldn't be able to make them.  A small but telling point.  For those of you unfortunate enough not to live in This Sceptred Isle, a better title might be 'Look At Me Me Me And My Grated Zucchini" for that's one of the major components of today's cooking.  Art!

More a species of vegiburger than a cake, and taken directly from my Anthony Worrall-Thompson 'Diabetic's Cookbook'.  They seem to be diabetic-friendly because of the wholemeal flour used, which is less of a GI issue than refined white flour.

Enough of this dull domestic tranquillity, time to unleash the weekly glut of links to the past.
